COMPASSIONATE CONSUMPTION

As Catholics, we have a great history that includes meat-free Fridays, vegetarian contemplative orders and powerful social justice statements, writes Mercy Sister Elizabeth Young. She has found that enjoying a vegan diet since 2005, as one response to more compassionate living, has allowed creative and tasty ways of eating and now asks isn’t it time to reassess our eating habits and stand for compassionate consumption?
